Food Additive (Traditional/Specific Application):
Anticaking Agent for Salt: In China, the Green Type is approved as an anticaking agent for table salt (as an alternative to potassium ferrocyanide), preventing caking while providing some iron fortification. This is its primary food use today.
Nutrient Fortificant: Historically used for iron fortification of flour and infant foods. Largely replaced by more stable, sensorially superior iron sources (e.g., sodium iron EDTA, ferric pyrophosphate) due to its color, instability, and metallic taste.
Black Bean Coloring Agent: Used in the traditional preparation of "iron-fortified black beans" or "salted beans." It reacts with tannins in the bean skin to form a stable blue-black color, serving both as a colorant and fortificant.
