Physical Properties: It is a white or slightly yellow crystalline granule or powder. It is odorless, salty and cool in taste, and has deliquescence. It is easily soluble in water and almost insoluble in ethanol. The relative density is 1.98, and it melts and decomposes when heated to 230°C.
Uses: In the food industry, it can be used as an acidity regulator, chelating agent, stabilizer, etc. In the pharmaceutical field, it can be used to control kidney stones or uric acid or cystine, and for the treatment of hypokalemia and alkalization of urine.
